Our Smoked Kovbasa is a take on various kovbasa recipes. Just like a lot of polish sausage, kovbasa means sausage in Ukraine. It is usually made with regional ingredients and can vary from family to family. With ours we put in a lot of garlic (as always), some coriander, black pepper, all spice, eggs from Crown Hill Farm, as well as made a peperivka using dried cayenne peppers from CHF and vodka from Lockhouse Distillery). We smoked them with apple woodchips.
